Spicy Mango and Chicken Steelmade Skewers

Spicy chicken and mango skewers sizzle to perfection on a Steelmade flat top, blending juicy sweetness with a fiery kick in each succulent bite.

Ingredients

  • Skewers
  • 6 tbsp. Olive Oil
  • 1/4 cup fresh lime juice
  • 1 tsp salt
  • 4 chicken breasts, cubed
  • 4 mangos, cut into 1" cubes
  • 1 tsp chili powder
  • 1/2 tsp cayenne pepper
  • 1 tbsp sugar
  • Tajin seasoning (Optional)

Directions



  1. Using a large bowl, combine the fresh lime juice, olive oil, cayenne, sugar, salt, and chili powder. Stir until well combined and add the chicken and mango cubes to the marinade. If the bowl is not big enough, you can transfer to a larger bowl or a zip lock bag. Cover or zip shut and place in the fridge for about 3 hours.
  2. Begin by pre-heating the Flat Top by turning the burners to medium-low heat and allow 10-15 minutes for proper heating. 
  3. When the Flat Top is heating, make the skewers by carefully sliding the chicken and mangos onto the skewers alternating between each piece. 
  4. Once the Flat Top has properly heated up, add some olive oil to the surface of the Flat Top and let heat for a few minutes. Place the skewers onto the griddle and close the grills lid. If cooking inside, cover with a dome or large bowl. Add the Tajin seasoning if you would like some added spice!
  5. Every 3-4 minutes flip the skewers. They should cook on all 4 "sides" and a nice char should develop on each side of the skewer. 
  6. Once each side of the skewer has cooked for 3-4 minutes, shut the burners off and let the skewers sit on the griddle for 5 minutes.  
  7. When the 5 minutes are up plate the skewers and enjoy!
