Chicken Gyros with Grilled Veggies

Flat Top Grilled Greek Flavor—Fast & Fresh

Skip the takeout and fire up your flat top! These Chicken Gyros with Grilled Veggies are packed with bold Mediterranean flavor and cooked entirely on the Steelmade Flat Top. Juicy chicken, charred veggies, and warm naan or pita come together for a handheld meal that’s light, fresh, and satisfying.

Perfect for summer grilling or weeknight dinners, this recipe is quick, customizable, and endlessly craveable.


🛒 Ingredients

For the Chicken:

  • 1½ lbs boneless, skinless chicken breasts or thighs, sliced into strips

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 2 tsp garlic powder

  • 1 tsp dried oregano

  • 1 tsp smoked paprika

  • Salt & pepper to taste

For the Grilled Veggies:

  • 1 zucchini, diced

  • 1 yellow squash, diced

  • ½ red onion, sliced

  • 1–2 Roma tomatoes, sliced

  • 1 tbsp olive oil

  • Salt, pepper, and oregano to taste

For Serving:

  • Naan or pita bread

  • Tzatziki sauce (store-bought or homemade)

  • Optional toppings: crumbled feta, cucumber slices, chopped parsley, olives


🔥 Instructions

1. Prep the Chicken

In a bowl, combine olive oil, lemon juice, garlic powder, oregano, paprika, salt, and pepper. Toss with the sliced chicken and let marinate while the flat top preheats.


2. Heat the Flat Top

Preheat your Steelmade Flat Top to medium-high heat. Drizzle with a little olive oil.


3. Cook the Veggies

Add zucchini, squash, onions, and tomatoes to one side of the flat top. Season and cook for 6–8 minutes, stirring occasionally, until tender and slightly charred.


4. Cook the Chicken

On the other side of the flat top, spread out the marinated chicken. Cook for 5–7 minutes, flipping halfway, until golden and fully cooked.


5. Warm the Bread

Add naan or pita to the flat top for the last 2 minutes, flipping once until soft and lightly browned.


6. Build the Gyros

Layer chicken and grilled veggies on warm bread. Top with tzatziki, feta, cucumbers, or anything you love.
