Santa Fe Chicken

Ingredients


  • 3 chicken breasts 
  • 1 can corn 
  • 1 can black beans 
  • 1 can Ro-tel tomatoes 
  • 1 onion 
  • Mexican blend shredded cheese 
  • 1 tsp. smoked paprika 
  • 1/2 tsp. garlic powder 
  • 1/2 tsp. chili powder 
  • salt & pepper, to taste 
  • 2 tbsp. olive oil


Directions
  1. Pre-heat the Flat Top by turning the burners to medium-low heat and allow 10-15 minutes for proper heating. 
  2. As the Flat Top heats, chop the onion and fillet the chicken in half. 
  3. Season both side of the chicken with the garlic powder, chili powder, salt, and pepper. 
  4. Add olive oil to the surface of the Flat Top and let it heat up for a few minutes.  
  5. Add the chicken and cook for 3-5 minutes on each side. 
  6. While the chicken is cooking add the onion to the Flat Top and saute for 5 minutes. 
  7. Once the onion softens, add the remaining vegetables and season with paprika.  
  8. Mix together and cook for a few minutes. 
  9. Add a thin layer of cheese to the top of each chicken cutlet. 
  10. Top the cheese with the vegtable mixture followed with another layer of cheese. 
  11. Turn all burners off and let the cheese melt. 
  12. Plate the dish and serve warm!
