firebee bbq chicken sandwich

- 4 hamburger buns
- 4 Chicken breast
- 3/4 cup Firebee BBQ Sauce
- 6 baby yukon potatoes, sliced thin
- 1 tomato, sliced
- 4 pieces leaf lettuce
- salt and pepper to taste
- 3/4 cup olive oil

- Heat one side of Flat Top to medium heat. Oil well and begin cooking chicken breasts. (You want fairly thin pieces of chicken, so butterfly if needed.) Season well with salt and pepper. Flip once browned (about 2 minutes.)
- Heat other side of Flat Top on high heat. Heat 1/2 cup of olive oil. Add thinly sliced potatoes and season well with salt and pepper. Watch closely, as they will cook quickly. Remove from heat once browned and a bit crispy.
- Toast buns with a bit of oil until golden.
- Once chicken is cooked through, add bbq sauce to both sides of the chicken and allow to caramelize slightly.
- Construct your sandwich! Add lettuce, tomato, and more sauce if you prefer. Enjoy!
