🍑 Peach and Blackberry Galette on the Pizza Steel

🍑 Peach & Blackberry Galette

Bakes directly on your Steelmade Pizza Steel for a golden, flaky finish

Ingredients:

For the crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 3–4 tbsp ice water

For the filling:

  • 2 ripe peaches, peeled and sliced
  • 1/2 cup fresh or frozen blackberries
  • 1/4 cup sugar
  • 1 tbsp cornstarch
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon (optional)
  • 1 tsp lemon juice

To finish:

  • 1 egg, beaten (for egg wash)
  • Coarse sugar for sprinkling


Instructions:

  1. Prep Your Dough (can be made ahead)
    1. In a bowl, combine flour, salt, and sugar.
    2. Cut in butter using a pastry cutter or fork until mixture resembles coarse crumbs.
    3. Add ice water 1 tbsp at a time, mixing just until dough comes together.
    4. Form into a disk, wrap in plastic, and chill at least 1 hour.
  2. Preheat Steelmade Pizza Steel
    1. Place your Steelmade Pizza Steel on the center rack of your oven.
    2. Preheat oven to 450°F (232°C) at least 45 minutes before baking to fully heat the steel.
  3. Prepare the Filling
    1. In a bowl, gently toss peach slices and blackberries with sugar, cornstarch, vanilla, cinnamon (if using), and lemon juice.
    2. Let sit while you roll the dough.
  4. Assemble the Galette
    1. On a sheet of parchment paper, roll out the chilled dough into a 12-inch circle (about 1/8 inch thick).
    2. Pile the fruit mixture into the center, leaving a 2-inch border.
    3. Fold edges of dough over fruit, pleating as needed. The center should remain exposed.
    4. Brush crust with egg wash and sprinkle with coarse sugar.
  5. Bake on the Pizza Steel
    1. Slide the parchment paper with the galette onto a pizza peel or baking sheet.
    2. Carefully transfer it onto the hot Steelmade Pizza Steel.
    3. Bake for 20–25 minutes, or until the crust is golden and fruit is bubbling.
  6. Cool and Serve
    1. Let galette cool 10–15 minutes before slicing.
    2. Serve warm or room temp, optionally with whipped cream or vanilla ice cream.
