Begin by pre-heating the Flat Top by turning the burners to medium-low heat and allow 10-15 minutes for proper heating.
As the Flat Top heats, slice the strawberries and place in a bowl. Combine with granulated sugar and stir until well coated. Let sit for 10 minutes as they macerate.
Next, we will make the filling. In a large bowl combine 8 oz. of softened cream cheese, 1/4 cup sour cream, 1 tbsp. lemon juice, 3/4 cup powdered sugar, and 2 tsp. of vanilla. Whisk until smooth.
For the egg mixture, crack 5 large eggs in a bowl and mix with 1 cup half & half, 1 tsp. cinnamon, and 1 tsp. vanilla. Stir until well combined.
Assemble the french toast by spreading the cream cheese mixture on two pieces of bread. Lay strawberry slices evenly on the cream cheese of one slice of bread. Place the cream cheese side down on the strawberries to form a sandwich.
Repeat until 6 sandwhiches have been formed.
Dip the sandwiches one by one into the egg mixture and place onto the flat top.
Cook each side for 2-3 minutes or until golden brown.
